ChiliCali Sambal offers an inspiring take on a traditional Asian hot sauce that will add eclectic flavors to your cooking pantry. The sambal sauce is made in small batches with farm-to-jar philosophy and no artificial preservatives. It has been crafted with a sense of purpose.
The sauce is inspired by Indonesian mother sauces, or "bumbu". They are essentials in every Indonesian kitchen and play a major role in the foundations of a large number of recipes that are cooked daily.
In 2017 we launched a line of these Indonesian cooking sauces, but our Sambal Red Hot Chili Base is the most popular one, and in 2019 we won the prestigious Good Food Awards Pantry Category. We've decided to focus on producing this sauce now and hopefully one day we can introduce the other sauces back to the U.S. market.
As a chef-driven food company, ChiliCali is working persistently to create a healthier and more sustainable food system. Since its inception, we have connected with farmers who grow our peppers, lemongrass, Makrut leaves, and ginger. Our sauces use only fresh ingredients. They are vegan, gluten-free, and without artificial preservatives.
We sold our Sambal through local Bay Area Safeways, Epicurean Traders, SHED, and Good Eggs. We stopped production in 2020 due to the COVID-19 pandemic. Thanks to the resiliency grant that we received through Real Food Real Stories (RFRS), we are able to produce this delicious sambal sauce again.

Everyday Asian Sauce, Sambal Red Hot Chili Base
Great for: Stir-fries, dipping sauce, hot sauce, curries, and anything you want to be hot.
Chili paste is made of Fresno peppers, ginger, lemongrass, makrut lime leaves, garlic, and shallots, sambal may be simple, but its flavors are anything but. Stir in with proteins, and veggies, or add as a topping to give your dishes a tasty burst of heat and spice.
